Green juice has a reputation for tasting like a lawn. This one does not. The green apple and lime bring sweetness and acidity, and cucumber keeps everything light and hydrating.
Ingredients (2 glasses)
- 1 large cucumber
- 3 celery stalks
- 2 big handfuls of spinach
- 1 green apple, cored
- 1 lime, peeled
- A thumb of ginger (optional)
Method
- Wash everything well — leafy greens hold on to grit.
- If you have a juicer: alternate soft and hard ingredients so the spinach gets pushed through.
- If you have a blender: blend with 200 ml cold water and strain through a fine sieve or a nut-milk bag.
- Serve over ice and drink within 20 minutes — green juice oxidises fast.
Why it works
You are getting potassium from the celery, vitamin K and folate from the spinach, and vitamin C from the lime and apple. It is not magic, just a very efficient way to eat a lot of vegetables before 9 a.m.
